Ingredients
2 tablespoons olive oil1 x 250g packet Kale and Smoked Paprika Burgers
1 small red onion peeled and sliced
1 cup peeled and finely sliced sweet potato
2 focaccia style bread rolls, halved
2 tablespoons light cream cheese
Spinach leaves
Kale & Smoked Paprika Burger with Sweet Potato & Red Onions

1. Heat olive oil in a frying pan on a medium heat. Add burgers and cook for approximately 2 minutes on each side. Remove from pan and set aside.
2. Add red onion and sweet potato to the pan and cook until the vegetables are just tender, stirring occasionally.
3. Toast bread rolls and spread the bottom half with cream cheese. Top each roll with spinach leaves, the sweet potato and onion mixture and cooked burgers.
4. Arrange red onion on top then add bun lid and serve.
