Ingredients
- 250g of dried macaroni pasta- 250g broccoli, cut into small florets
- 20g of dairy free spread, such as nuttelex
- 2 tablespoons of plain flour
- 2 cups of reduced fat soy milk
- 100g of Simply Better Soy Cheese, grated
- 4 green onions, thinly sliced
- Parsley leaves, to serve
Mac and Soy Cheese

An easy to make recipe that has the great taste of Australian Eatwell’s Soy Cheese, but without the dairy. In total it can be cooked and served in less than an hour and serves.
Method
- Preheat oven to 180°C/160°C fan-forced. Grease a 6 cup-capacity baking dish. Cook pasta in a large saucepan of boiling water following packet directions until tender, adding broccoli for the last 2 minutes. Drain well. Transfer to a large bowl
- Melt spread in a saucepan over medium heat. Add flour. Cook, stirring, for 2 minutes or until bubbling. Gradually add milk, whisking constantly. Bring to the boil. Cook, whisking, for 5 minutes or until thick. Remove from heat. Stir in cheese. Season with pepper.
- Add sauce and onion to pasta. Stir to combine. Spoon into prepared baking dish. Bake for 15 to 20 minutes or until golden and bubbling. Serve with parsley.
