Ingredients
Focaccia bread (200g – 300g), halved2 medium mushroom, sliced
1 small red capsicum, sliced
1 small green capsicum, sliced
1 small red onion, diced
1 tomato, sliced
Your preferred cheese, sliced
2 Australian Eatwell Mediterranean burgers
Open Vegetable Focaccia Recipe

- Heat oil in pan and cook Mediterranean burgers, set aside.
- Spray mushrooms, both capsicums and onion with cooking spray and place in grill (medium heat) turning occasionally until crisp and tender.
- On the halved focaccia add grilled vegetables. Top with burgers, tomato slices and cheese
- Add all to the grill and heat until cheese has melted.
Notes:
Recipe serves two people, is very easy to make and it is great for a light meal as it is low in energy. Recipe is also vegetarian.
