Ingredients
- 1/2 cup diced onion- 1 tablespoon margarine
- 5 cups of skinless pumpkin, diced
- ¾ cup of diced potato
- 500ml of water
- 1 chicken stock cube
- Pinch of ginger and nutmeg
- Salt and pepper
- 500ml of milk
- 1 pack Australian Eatwell Chickpea and Spinach Sausages, cut into chunks
Pumpkin with chickpea and spinach sausage soup

A very easy, quick and healthy soup that will leave you full and satisfied. Any type of pumpkin can be used for this soup, in total it serves 4 people and should take roughly 50 minutes to prepare and cook.
Method:
- In a large saucepan cook onion in margarine. Add pumpkin, potatoes, water, ground ginger, ground nutmeg and season with salt and pepper. Cook for 20 minutes or until pumpkin and potatoes are tender.
- Add milk and blend until smooth
- Add sausage and cook for 5 minutes. serve
