Ingredients
1 x 250g packet Sweet Potato, Quinoa, Apple and Fennel Burgers2 slices Pane di Casa style bread
Mayonnaise
1 cup mixed salad leaves
4 baby Roma tomatoes, halved
ΒΌ avocado, sliced
Spinach leaves
Sweet Potato Quinoa Apple & Fennel Burger

1. Pan-fry the burgers in a little olive oil over a medium heat for approximately 2 minutes on each side.
2. Toast the bread slices and spread each one generously with mayonnaise.
3. Arrange half the lettuce leaves on each slice of bread.
4. Top with a burger and finish with avocado, spinach and tomatoes.
