Ingredients
1 tablespoon apple cider vinegar1 ½ cups almond milk
2 cups plain flour
1 cup white sugar
2 teaspoons of baking powder
½ teaspoon of baking soda
½ teaspoon salt
½ cup coconut oil (heated until liquid)
1 ¼ teaspoons of vanilla extract
Vegan Cupcakes Recipe

- Preheat oven 175 C and grease cup trays or line with baking cups
- In 2 different cups put half the apple cider vinegar and add half almond milk. Let stand until curdled (5 mins).
- In a large bowl mix together the flour, sugar, baking powder, baking soda and salt. In a separate bowl mix together the almond milk mixture, coconut oil and vanilla.
- Now mix together wet and dry ingredients until combined properly.
- Divide in to pans or cups evenly. And bake for 15 to 20 minutes, then cool.
