Pre-heat oven to 190c (375F). Lightly grease a baking dish.

  1. Sweat fennel, onion, thyme leaves, oregano, orange rind & garlic until soft over a low heat.
  2. Season with salt & pepper.
  3. Combine pasta, Fresh Vegie Pasta Sauce and fennel. Mix and poor into a baking dish. Cover with parmesan cheese and bake until golden approximately 30 minutes.

250g packet Fresh Vegie Pasta Sauce – Onion, Zucchini & Oregano
1 clove Garlic crushed
1 bulb Fennel thinly sliced
2 sprigs of Thyme
2 sprigs of Oregano
1 Orange Rind finely grated
½ small Onion thinly sliced
150g grated Parmesan Cheese
200g Penne cooked al dente
Salt & Pepper
