  1. Boil salted water, add pasta, cook until al dente.
  2. Heat oil in fry pan, add eggplant and sauté until golden.
  3. Add garlic and Fresh Vegie Pasta Sauce, heat through.
  4. Toss through pasta, add ricotta cheese & torn basil leaves. Toss & serve.

250g packet Fresh Vegie Pasta Sauce – Onion, Zucchini & Oregano
200g Linguine
1 small Eggplant diced
1 clove Garlic diced
Olive oil for frying
100g Ricotta Cheese
4 sprigs of fresh Basil
Salt & Cracked Pepper
